In this role, the Senior Procurement Manager will have strategic ownership and accountability for a portfolio of high‑value, business‑critical procurement categories across operational services and supplies, with a primary focus on Food & Beverage within the United Kingdom and Ireland. The role is accountable for end‑to‑end category strategy, supplier selection, commercial frameworks, contract performance, and value realisation. This includes leading complex tenders, negotiating strategic supplier agreements, managing commercial risk, and acting as a senior commercial advisor to hotel operators and internal stakeholders. The role also drives procurement maturity through data‑led decision‑making, governance, systems adoption, and capability development.

  • Lead complex tenders and negotiations for high‑value and high‑risk categories, exercising decision authority within delegated limits.

  • Use advanced analytics and procurement intelligence to inform category strategies, negotiation positions, and stakeholder decisions.
  • Oversee spend analysis, compliance reporting, benchmarking, and performance dashboards at portfolio level.
  • Identify and manage commercial, supply chain, and operational risks across assigned categories.
  • Ensure procurement systems (BirchStreet, Smart Spend, Procure Wizard) are embedded as strategic enablers, not just transactional tools.
  • Set and manage standards for data quality, supplier catalogues, and system governance within assigned categories.

Leadership, Stakeholder & Capability Development – 20%

  • Act as a trusted procurement advisor to senior hotel leadership and cross‑functional partners.
  • Contribute to the development of procurement capability, best practice, and functional maturity within HSM.
