Job Description:At the DTU National Food Institute, we are looking for an ambitious scientist for a 24-month postdoc position to explore sustainable food processing through fermentation-based upcycling of food waste. At the DTU National Food Institute, you will work at the cutting edge of bioprocessing research to enhance the quality and functionality of food while promoting sustainability by optimizing resource utilization. The research combines food processing, fermentation, protein and lipid extraction, and characterization of novel food ingredients.Responsibilities and qualifications
The DTU National Food Institute aims to develop innovative and sustainable solutions in food processing exploring new sources of bio-functional metabolites that can be applied in various food formulations.In the research group for food production engineering, we focus on the processing, food formulation, physicochemical and modelling and optimization of food processes and products.You will contribute to this by:

  • Drive research activities on emerging technologies as innovative and sustainable processing on food matrix.
  • Proposing new solutions to reduce food waste and methods of extraction and application of ingredients in food formulations.
  • Establishing collaboration between different research groups and enhancing the knowledge in the field.
  • Disseminate research findings nationally and internationally, as well as through teaching and supervising tasks.

Skills, Knowledge, and Experience:

  • A PhD degree (or thesis submitted and accepted) in Food Science and Technology, Food Chemistry, Process Engineering, or a related field.
  • Strong expertise in fermentation processes for food waste valorization and bioprocess optimization.
  • Experience in protein and fat extraction using green processing techniques such as supercritical fluid extraction (SFC), ultrasonication and so on .
  • Familiarity with food ingredient functionality and interactions, including foaming, emulsifying, and gelling properties.
  • Solid experience in the characterization of food materials and formulations using:
  • Differential Scanning Calorimetry (DSC)
  • Bulk and interfacial rheology
  • Fourier Transform Infrared Spectroscopy (FTIR)
  • and microscopy, including florescence microscopy, SEM, and confocal.
  • Ability to work independently and take responsibility for project progress and quality.
  • Experience in securing external research funding is an advantage.
  • Strong written and oral communication skills in English.
