About Orient Express La Minerva

Considered as the beloved capital of the Orient Express legend, Rome is the first Orient Express hotel, La Minerva, in 2025. Orient Express has entrusted the interior architecture and artistic direction of the hotel Hugo Toro. The former Palazzo Fonseca is a sumptuous 17th-century palace with a huge, majestic façade. A place of memory still adorned with its Roman columns, sculptures by Rinaldo Rinaldi, a disciple of Canova, and the fascinating goddess Minerva. At the end of 2024, a new décor and interior inspired by the Roman domus and the riches of the “Eternal City” will be revealed with a new touch of contemporary elegance.

Job Description

The Commis de Cuisine supports the culinary team in the preparation, cooking, and presentation of food, ensuring the highest standards of quality, hygiene, and guest satisfaction expected in a luxury 5-star hotel. The role provides an excellent opportunity to develop culinary skills while working alongside experienced chefs in a professional and fast-paced environment.

• Prepare ingredients including vegetables, meats, fish, sauces, and garnishes according to established recipes and standards.
• Assist in the preparation and cooking of menu items for restaurants, banquets, room service, breakfast, and special events.
• Ensure food is prepared and presented according to hotel quality standards.
• Support the brigade during service periods while maintaining consistency and attention to detail.
• Assist with receiving, storing, and rotating products according to FIFO procedures.
• Follow HACCP procedures and food safety regulations at all times.
• Maintain cleanliness and sanitation of equipment, work areas, and storage rooms.
• Ensure proper handling, labeling, and storage of food products.
• Comply with all health and safety regulations.

Qualifications

• Culinary diploma or equivalent professional training preferred.
• Previous internship or experience in hotels, restaurants, or catering operations is considered an asset.
• Basic knowledge of food preparation techniques and kitchen operations.
• Understanding of food hygiene and safety practices.
