Position Type Non-ManagementPart of the Luxury Group of Marriott International Casa Brera is currently recruiting Sous Chefs to join the pre-opening team made of modern and authentic hospitality professionals.Reporting to the Executive Sous Chef, the role will be responsible for coordinating the culinary team.This is full-time position, 5 days a week with 2 days off.The starting date is estimated in August/September.About usCasa Brera is an unexpected gateway in the heart of Brera set to open its doors soon.Reinterpreted by Studio Urquiola, Casa Brera features 116 sophisticated guestrooms including 15 suites and the Milanese Suite.   • Coordinate the culinary team and support the Executive Sous Chef in all culinary operations.
  • Support all the parties and coordinate the brigade during service.
  • Process orders in company systems, maintain relationship with the purchasing department and approved suppliers.
  • Review production sheet to understand variety of goods to be produced daily.
  • Prepare and cook food according to recipes, quality and presentation standards, and food prep checklists.
  • Maintain kitchen logs for food safety program compliance.
  • Keep Chef informed of excess food items for planning of daily specials.
  • Safely and appropriately use baking and measuring tools/equipment/appliances to prepare baked foods.
  • Check and ensure correct temperatures of kitchen appliances and food, and report issues to management.
  • Monitor the quality of food prepared and portions served throughout the shift.
  • Assist management in training, scheduling, evaluating and motivating employees; serve as a role model.
  • Ensure compliance with safety training and certifications.
  • Follow Standard Operating Procedures and brand identity guidelines.
  • Comply with quality assurance expectations and standards.
  • Comply with all health, safety and hygiene standards and policies.
